This low histamine beef stew uses boneless beef chuck roast, Yukon gold potatoes, carrots, celery, and shallots simmered in low sodium broth. No red wine, no wine-based marinades, and no high-histamine additions go into the pot. The stew cooks on the stovetop in about 1 hour 40 minutes and serves 6.

Chuck roast is the cut this stew needs, not pre-packaged stew meat. Pre-packaged stew meat is typically scraps from the butcher at mixed cuts, and those uneven pieces don’t cook at the same rate. Chuck roast has the connective tissue that breaks down slowly over 1.5 hours and leaves the meat tender.

Browning the beef in batches is what gives this stew the depth that wine usually provides. If the chunks touch in the pan, they release steam and turn gray rather than building a crust. The dark bits left in the pot dissolve into the broth during simmering and build the savory base the whole stew depends on.

Low Histamine Beef Stew Recipe: boneless chuck roast, Yukon gold potatoes, carrots, and shallots simmered without wine. Ready in 1 hour 40 minutes. Serves 6

Ingredients

  • Stew
  • 2.75 lbs boneless beef chuck roast, cut into bite-sized pieces

  • Splash of olive oil (for searing)

  • 2 tablespoons butter or olive oil (for sautéing)

  • 2 large shallots, chopped

  • 2 celery stalks, chopped

  • 3 carrots, peeled and chopped

  • 3 garlic cloves, minced

  • 3 Yukon gold potatoes, cut into 1-inch pieces

  • 2 tablespoons all-purpose flour

  • 2 sprigs fresh rosemary

  • ½ teaspoon dried thyme

  • 2 bay leaves

  • 5 cups low sodium beef or vegetable broth

  • Kosher salt and black pepper

Directions

  • Season beef with kosher salt and black pepper. Heat a splash of olive oil in a large dutch oven over medium-high heat. Sear chuck roast pieces in batches until dark brown on most sides, about 5 to 6 minutes per batch. Do not crowd the pieces. Remove browned beef and set aside.
  • Leave the drippings in the pot. Add 2 tablespoons butter or olive oil, then add shallots, celery, and carrots. Stir over medium heat until softened, about 3 minutes. Add garlic and stir for 1 more minute. Add potatoes and the browned beef. Stir in flour until everything is evenly coated.
  • Pour in the broth and stir to loosen any browned bits from the pan. Add the rosemary, thyme, bay leaves, and ½ teaspoon kosher salt. Bring to a boil over high heat, then reduce to low. Cover and simmer for 1 to 1.5 hours until the beef is tender and the flavors have combined.
  • Taste and adjust seasonings. Remove bay leaves and rosemary sprigs before serving.

FAQs

Does cooking or reducing wine make it safe for histamine-sensitive people?

Reducing red wine does not remove the sulfites or histamine it contains. The reduction process concentrates them into a smaller volume, making each spoonful more potent than the wine was before cooking. Skipping wine entirely and building flavor through searing and quality broth is the only reliable approach for people managing histamine reactions.

What does the flour do in this stew and can I skip it?

Flour stirred into the meat and vegetables coats them before the broth is added, creating a light thickener as the stew simmers. Skipping it produces a thinner, more soup-like consistency rather than the heavier, stew-like texture. For gluten free, cornstarch, arrowroot flour whisked with broth until smooth, or gluten-free all-purpose flour all substitute directly.

Can I use tart cherry juice as a wine substitute in this stew?

A half cup of tart cherry juice in place of some broth gives the liquid a similar color and tanginess to red wine. The juice contributes natural sweetness that balances the savory notes without making the stew taste fruity. For extra depth, a quarter cup of coconut aminos added with the broth builds a fuller flavor with no histamine risk.

What other low histamine beef dish works well for weekly meal planning?

A slow-cooked beef dish is the natural companion for meal planning alongside this stew. A histamine-safe beef casserole on Savory Sides takes the same root vegetables and fresh broth into a covered baking dish for a different texture and finish. Rotating both through the week covers hearty, safe dinners without repeating the exact same bowl.

What low histamine side pairs best alongside this stew?

Most store-bought bread contains vinegar or additives that raise histamine load, making it a risky stew companion. A creamy potato side on Savory Sides uses fresh potatoes, butter, and milk for a clean, trigger-free pairing. The smooth texture absorbs the stew broth and rounds out the meal without repeating the chunky root vegetables already in the pot.
